Durian Sticky Rice with Coconut Sugar (Palm Sugar)
Preparation time: 3 hours
Cooking time: 25 minutes - Sticky Rice Ingredients: 1 cup sticky rice / 1 cup coconut milk / 1 pinch of salt
- Durian Sauce Ingredients: 2 durian seeds / 1 cup coconut milk / 3 tbsp coconut sugar (palm sugar) / 1 tbsp cornstarch / 2 tbsp water
- Prepare the sticky rice: Wash the sticky rice thoroughly. Place the rice in a sieve in a bowl of water and stir vigorously. Drain the cloudy water and repeat the process 2-3 times until the water runs clear. Wrap the rice in a kitchen towel and let it soak for at least 3 hours. Steam the rice for 25 minutes or until fully cooked. Once the rice is tender, transfer it to a saucepan and heat over low heat. Add 1 cup of coconut milk and a pinch of salt. Gently stir the rice until it absorbs the coconut milk and becomes sticky (about 4 minutes).
- Prepare the durian sauce: Place the pulp of two durian seeds, 1 cup of coconut milk, and 3 tablespoons of coconut sugar in a saucepan. Heat the mixture over medium heat, stirring to break up the durian seeds until the sugar dissolves. In a small bowl, combine 1 tablespoon of cornstarch with 2 tablespoons of water. Gradually add this mixture to the durian sauce, stirring constantly, until the sauce thickens. For a thicker sauce, repeat the process with a little more cornstarch. Remove from heat.
- Plate and serve: Arrange the sticky rice on plates and pour the sweet durian sauce over it. Enjoy warm!
